Jeans Famous Lemon Curd Recipe
6 oz sugar
2 oz butter
2 eggs
2 lemons - Juice and rind
Put eggs, sugar and butter in a heatproof basin over a pan of simmering water. Melt until sugar dissolves, add lemon juice and stir until curd thickens and coats the back of a spoon.
Pot in small jars and cover when cold, keep refrigerated.
ENJOY!
Ann's Seville Marmalade
2kg Seville Oranges
2 lemons
2-3 pints of water
3kg Sugar
Scrub the fruit, cut in half and squeeze out the juice and pips. Slice the peel and put in a very large deep saucepan or preserving pan with the lemon juice, water and pips (tied in a muslin bag).
Cook gently until the peel is soft. Squeeze the juice from the bag of pips then remove the bag, add the sugar, stir until this is dissolved, then bring to the boil. Boil rapidly til setting point is reached. Test by putting a teaspoon of marmalade onto a cold saucer, it should wrinkle when pushed with your finger,
Remove any scum and let the marmalade cool slightly before pouring into warmed jars. Cover with waxed discs while still hot and seal when cold.
Pickled Onions
1kg pickling onions or shallots
30g/1oz Salt
1 tsp dried chilli flakes
1 litre vinegar
180g/6oz granulated sugar
Put the onions in a large bowl with the salt and mix together. Cover and leave overnight.
Rinse well in cold water and allow ti dry as much as possible. Pack the onions into sterilised jars. Put the vinegar, chilli flakes and sugar into a pan and slowly bring to the boil to dissolve the sugar. Pour the vinegar over the onions and seal the jars. Store in a cool, dark cupboard for 2 weeks before eating.

Grass and flowers sprouting from the rich soil
Not oceans and seas covered with thick black oil
Crystal lakes, rivers and streams,
Not tall chimneys sending out clouds of steam
Waterfalls that make you stand and stare
Not smoke and fumes polluting the air
Where creatures large and small are found
Not litter and waste covering the ground
Working together we can make it right
The World once again a beautiful sight.

ANTICIPATION .............................Just wait until we get home!
CONTORTIONISM...........................Will you look at the dirt on the back of your neck?
IRONY....................................................Keep crying & I'll give you something to cry about
HYPOCRISY...........................................I've told you a million times, don't exaggerate
TO APPRECIATE A JOB WELL DONE...If you're going to kill each other, do it outside, I've just finished cleaning
LOGIC......................................................Because I say so, that's why
RELIGION.............................................You'd better pray that the stain comes out
WEATHER...............................................Your room looks as if a tornado has hit it
STAMINA...............................................You'll sit there until it's all gone
CONTRADICTION.............................Shut your mouth and eat your food
TIME TRAVEL......................................I'm going to knock you into the middle of next week
FORESIGHT...........................................Make sure your underwear is clean, in case you get knocked down
WISDOM.................................................When you get to my age, you'll understand
